Chefto join our growing team. You're an individual whose interest

superb customer service and quality food. This role is based out of
ourcommissary kitchen located inHunts Point, Bronx.Role Overview:As
a member of our kitchen team, our Sous Chef will work closely with
the the Executive Chef and Kitchen Manager to ensure the highest
standards are met for all food prepared at the commissary and
served at our store locations. They will assist in creating and
ensuring Citarella standards, systems and procedures are maintained
and followed. The Sous Chefs are also responsible for working with
the Kitchen Manager(s) in overseeing overall commissary operations
while also nurturing and supporting the culinary team leading by
example on or off the line.Responsibilities:
- Work with Executive Chef and Kitchen Manager(s) to develop,
train, and foster a positive environment for kitchen team. Duties
will include, but not be limited, to SOPs, sanitation & food
handling, menu standards, presentation, cooking
techniques/efficiencies, catering cooking and displays, etc.
- Work with Executive Chef and Kitchen Manager to instill a
positive Company Culture, build morale and create an on-going
positive work environment utilizing established as well as newly
developed initiatives
- Work hands on with Executive Chef and Kitchen Manager(s) to
continually monitor production procedures to ensure quality,
consistency, efficiency, productivity and professionalism are at
highest level
- Supervise cooks to ensure all daily and weekly projects and
tasks are met. Ensure recipes/methods, quality, portioning, product
utilization, deadlines, daily/weekly/holiday planning, purchasing,
communication, inventoryare followed.
- Learn about new and seasonal menu items and changes in
procedures for current menu items. Oversee and hold staff
accountable for implementing new/revised menu changes.
- Work with Executive Chef and Kitchen Manager(s) in developing
production methodologies to increase efficiency, productivity,
quality and/or consistency in commissary
- Conduct Daily and Weekly recaps with necessary chefs and
managers to plan and forecast all aspects of production
- Prepare, cook, and package food for store delivery
- Inspect supplies, equipment, or work areas to ensure
conformance to established standard
- Accountable for working with Executive Chef and Kitchen
Manager(s) in meeting budgets for food, labor, and direct operating
expenses as they pertain to the culinary operations
- Work with Executive Chef and Kitchen Managers to ensure proper
portioning, preparing and serving quantities are accurate in order
to maintain food costsMinimum Requirements:
- 2-3 years experience in high volume production facility
(Commissary and/or multi unit production)
- Strong culinary and safety/sanitation knowledge
- Bilingual a plus (English/Spanish)
- Strong communication, organizational, and visual skills
- Ability to work in a fast pace environment and build
progressive speed; high volume
- Ability to safely handle and operate kitchen equipment and
knife skills
- Ability to work in a team-oriented environment
